Soba Noodles with Edamame and Tahini Dressing

Soba Noodles with Edamame and Tahini Dressing 


Ingredients 

1 Tbsp coconut oil
1 small red onion sliced
2 cloves of diced garlic
1 cups shredded red cabbage
1 cup of shredded carrots
1 cup of sliced red pepper
salt and pepper
1 tsp. ginger powder
1 tbsp. lime juice
1.5 cups of edamame


½ a package of dry soba noodles


Tahini Sauce

½ cup tahini
1/4 cup water
1 Tbsp. apple cider vinegar 
T tbsp of tamari or soy sauce
1 tbsp. honey
1 tbsp. lime juice
1 small clove of garlic minced
Dash of chili powder

Optional

2 tbsp. toasted sesame seeds 


Preparation 

  1. Heat a saute pan to medium-high. Add in the coconut oil, red onion, and garlic. Cook for 5 minutes until the onion is translucent. Then add the cabbage, carrots, and pepper, and cook for an additional 10 minutes. Season with salt, pepper, ginger powder, and 1 tbsp. of lime juice. Stir everything together and turn off the heat. 
  2. Cook the soba noddle according to package directions.
  3. While the noodles are cooking, make the sauce by combining all of the sauce ingredients in the food processor or whisking together thoroughly. 
  4. Add the noodles, vegetables, edamame, and sauce into a large bowl. Stir everything together, sprinkle in the sesame seeds, and serve. This can be enjoyed warm or cold.
