During January, I provided meal service for Raka Creative's holiday party. It was such a wonderful experience to work with this forward thinking and innovative company. The staff was welcoming, supportive, and friendly. It was such a pleasure to set up shop in their open-concept workspace, that houses a large kitchen and space for me to prepare and serve a really fun vegetarian meal!

One of the requested recipes was my Shredded Winter Green Salad. For this event, I had prepared butternut squash for the lasagna. I saved the seeds and roasted them for the salad! Yum! My grandmother would have been proud of me!

Shredded Winter Green Salad
Recipe by Kristen Carlson Wellness
1 small bunch kale
1 small bunch collard green
1 tsp ground black pepper, to taste, more for serving
1 Tbsp salt
1 cup roasted pumpkin, sunflower, or nuts of your choice
1 cup dried cranberries – reserve 2 Tbsp cup for serving
1/2 cup crumbled goat cheese reserve 2 Tbsp cup for serving
1 small red onion diced
1/2 cup balsamic vinegar
1/4 cup extra-virgin olive oil
1 Tbsp Dijon mustard
1 tsp Garlic Powder
1 tsp onion powder
1 Tbsp Honey
1 Tbsp pepper
