Pumpkin Lentil Taco Filling
1 Tbsp. of Coconut Oil
1 cup of Cooked Lentils
1/2 Cup of 100% Pure Pumpkin Puree
1 Small Yellow Onion (Diced)
2 Garlic Cloves, Diced
2 Cups Roughly Chopped White Button Mushrooms
3 Cups Chopped Spinach
½ cup Diced Walnuts
½ Tbsp. Chili Powder
1 Tbsp Cumin
1 Tbsp Garlic Powder
1/2 Tsp Cinnamon
1/2 Tbsp Smoked Paprika
Salt and Pepper to taste
Heat a saute pan to medium heat. Add in Coconut Oil. When the pan is hot, add in onion, and cook until translucent.
Add in the garlic, mushrooms, spinach, salt, and pepper, and cook for 10 minutes.
Add in the lentils and pumpkin puree and stir to combine.
Now add all of the spices and walnuts stir to combine. Season with Salt and Pepper.
Serve with corn or flour tortillas and squirt of lime, chopped cilantro, and plain greek yogurt.
