Preheat oven to 375 F, and line a 9×5 loaf pan with parchment paper. Put the oats in a food processor and blend until a fine powder forms.
In a large bowl combine all wet ingredients.
Add all other ingredients to the both and mix together gently.
Pour the batter into the prepared pan, then bake on the middle rack for 35-45 minutes.
Remove from the oven and let cool completely. Remove from the loaf pan and serve!
