GF Naturally Sweetened Apple Pecan Bread

Ingredients 


1 cup dry oats, ground into oat flour
1 cup almond flour
½ teaspoon salt
1 Tbsp. ground cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
½ teaspoon baking soda
½ teaspoon baking powder
4 Tbsp. flax meal
½ cup almond milk
1/4 cup maple syrup
½ cup unsweetened applesauce or apple butter
1 teaspoon vanilla extract
2 small apple diced
½ cup chopped pecans
Directions

  1. Preheat your oven to 375℉. Spray a loaf pan with cooking spray.
  2. Peel two apples and chop into small pieces. Set aside.
  3. In a food processor, pulse the cup of oats until they are fine and resemble flour.
  4. Place the oat flour in a large bowl. Add in the almond flour, salt, baking powder, baking soda, spices, and flax meal. Stir to combine.
  5. In a separate bowl, whisk together the almond milk, maple syrup, apple sauce, and vanilla extract. 
  6. Add the wet mixture into the flour mixture and stir until just combined. Fold in apples and pecans. Pour batter into a loaf pan lined with parchment paper
  7. Bake in the preheated oven for 45 mins to an hour. The loaf is ready when the center is firm and it is golden brown.
  8. Cool bread and enjoy!
