Corn and Black Bean Salad

Corn and Black Bean Salad


Ingredients

1 cup black beans
1 cup fresh corn from your local farm, roasted or grilled
1 cup chopped tomato fresh from the garden
1/2 cup diced red onion from your local farm

Dressing

2 Tbsp olive oil
2 1/2 Tbsp fresh lime juice
1/3 cup chopped fresh cilantro from the garden or farm
1 clove garlic, minced (1 tsp)
1 tsp honey
1/4 tsp each ground cumin and chili powder
Salt and freshly ground black pepper

Instructions

  1. Whisk together all dressing ingredients in a small mixing bowl, season with salt and pepper to taste. Chill until ready to use.
  2. Add black beans, corn, tomatoes, red onion, and corn to a large bowl.
  3. Pour in the dressing and stir
