Beet and Walnut Dip

Beet Walnut Dip!

This dip is loaded with antioxidants and nourishing Omega 3s! Beets are high in fiber, folate, manganese, potassium, iron, and vitamin C. Walnuts are rich in plant protein, omega 3’s and have a higher antioxidant activity than any other nut. This dip is earthy, hearty, and flavorful and is a great dish to bring to your next gathering.

1 medium cooked beet
1 cup roasted walnuts
1 lemon juiced
1 tablespoon molasses
1 teaspoon chili powder
2-3 roasted garlic cloves
1/2 cup walnut oil (you can find this at your local grocery store most likely)
Salt & black pepper to taste
Organic plain Greek yogurt for serviChia Seeds for serving
Lemon Juice for Serving

Add everything but the last 3 ingredients to the food processor. Process until smooth and creamy.

Pour desired amount into a serving dish, sprinkle with chia seeds, place a dollop of organic plain greek yogurt on top, and drizzle with a little lemon juice. Enjoy with veggies or pita.
